Kyodo ryori: Japan's regional dishes
Ishikari nabe, kiritanpo, oyaki, katsuo no tataki, and why the "100 best local dishes" list has only 99. JLPT N3 reading with translation.
Translation
Japan is long from north to south, and the climate and the foods that can be harvested differ greatly by region. For this reason, there are dishes that have been handed down since long ago, making use of what is produced in each area. These are called "郷土料理 (kyodo ryori, local cuisine)."
Local cuisine reflects the history and life of its region. For example, in cold Hokkaido, Ishikari-nabe, a hotpot containing salmon and other ingredients, is well known; in Akita, hotpot using kiritanpo—rice that is mashed and grilled—is famous. In Nagano, surrounded by mountains, oyaki—vegetables and other fillings wrapped in wheat-flour dough—are often eaten, and in Kochi, which faces the sea, katsuo no tataki made with fresh bonito is a specialty. Even for similar dishes, it is not uncommon for the seasoning and the way of making them to differ slightly by region or household.
In 2007, the Ministry of Agriculture, Forestry and Fisheries selected the "100 Selected Local Dishes of Farming, Mountain, and Fishing Villages" in order to make the country's local cuisine widely known. What is interesting is that, despite the name "100 selections," only 99 items were chosen. This is said to be because they wanted each person to choose their own favorite local dish as the final one.
Preserving such dishes also leads to passing on the food culture of each region to the next generation.
