Teishoku: the Japanese set meal
Rice, soup, a main and pickles served together: where set meals came from, what a noren means, and the words said before and after eating. JLPT N3 reading with translation.
Translation
When walking through towns in Japan, you often see the word "teishoku." A teishoku is a style of meal commonly eaten in Japan, in which rice, soup, a main dish (okazu), pickles, and so on are combined and served in advance. Unlike course meals where dishes are carried out one by one in order, a major feature of teishoku is that what you ordered is set on the table almost all at once. So you can eat in any order you like, in a balanced way.
Shops serving teishoku are said to have gradually spread from around the Edo period. The background is thought to be that the number of people coming from afar and people living alone increased, raising the need to eat out.
At the entrances of such eateries and teishoku shops, a cloth called a "noren" is often hung. The noren often has the shop's name written on it, and for customers it also serves as a marker meaning "this shop is open now."
And whether at a shop or at home, there is a custom of saying "itadakimasu" before a meal and "gochisousama" after finishing eating. "Itadakimasu" contains feelings of gratitude toward the lives that became the ingredients and toward the people who raised, transported, and cooked them. The "chisou" of "gochisousama" originally means "to run around," and is said to express gratitude for the busy preparation done in order to provide hospitality.
