Shun: eating with the seasons in Japan

What "shun" means, the stages hashiri, shun and nagori, and how Japanese food shows the season on the plate. JLPT N3 reading with translation.

Translation

In Japanese food culture, the idea of 「旬 (しゅん)」 has long been valued. 旬 refers to the period when a food is naturally harvested in abundance, tastes the best of the year, and is also rich in nutrients. The 旬 period differs by food. For example, it is said that bamboo shoots are good in spring, tomatoes in summer, saury and chestnuts in autumn, and yellowtail and daikon in winter.

Furthermore, even with the same ingredient, some people divide it into the 「はしり」 caught at the start of the season, the 「旬」 that is caught the most, and the 「名残 (なごり)」 at the end of the season, enjoying even the changes in flavor. Because the Japanese have been moved by the changing of the seasons, it is thought that the custom of savoring such subtle differences was born.

It is not only taste that conveys the seasons. In washoku, people choose serving vessels to match the season, or add seasonal leaves and flowers to dishes, devising ways so that the season can be enjoyed with the eyes as well.

Incidentally, nowadays if you go to the supermarket, you can buy most vegetables and fruits all year round. However, many of them are grown inside warm greenhouses or carried from foreign countries. That is exactly why, if you know the taste of naturally harvested 旬, you can feel the changing of the seasons more deeply.
