Ramen: from Chinese noodles to Japan's favourite

Soup, noodles and toppings, regional styles like Sapporo miso and Hakata tonkotsu, and instant ramen. JLPT N4 reading with translation.

Translation

Ramen is now one of Japan's representative foods, but it is said to have originally been based on a noodle dish that came from China. In the past it was called "shina soba" or "chuka soba."

Ramen is made with soup, noodles, and toppings. The flavor of the soup varies by shop, with shoyu (soy sauce), shio (salt), miso, and tonkotsu being well known. On top, char siu, egg, green onion, and the like are placed.

Throughout Japan there are "gotouchi ramen" born in particular regions. For example, miso ramen is famous in Sapporo in Hokkaido, and tonkotsu ramen is famous in Hakata and Kurume in Kyushu.

There are various theories about when ramen spread in Japan. Now, not only at shops but also instant ramen, which can be eaten right after adding hot water, is eaten around the world.
