Sushi: from narezushi to nigiri
How sushi began as fermented preserved fish and became Edo's fast food. JLPT N4 reading with translation.
Translation
Sushi is a Japanese dish well known even to people from other countries. Today's sushi comes in many varieties, but its origin is said to be "なれずし" (narezushi). Narezushi was an old preserved food made by pickling fish together with rice for a long time and letting it ferment.
Later, "早ずし" (hayazushi), which could be eaten right away without taking time, came to be made. Then, in the Edo period, "にぎりずし" (nigirizushi)—fish placed on top of vinegared rice and pressed by hand—is said to have been born in the town of Edo.
Nigirizushi was originally a dish that could be eaten easily at food stalls. Rather than the expensive cuisine it is today, it is said to have been something like fast food, eaten when you were hungry.
There are various theories about the origin and spread of sushi, but over a long time it has taken its present form.
